RAW Coconut & Spice Granola - Chewy, satisfying, and guiltless. These raw goodies will dance across your taste buds like no other ordinary granola bar.

These guiltless goodies will definitely satisfy your sweetest cravings while still being healthy and packed full of nutrition. This is a very versatile recipe, you can make this as a base for a raw pie, roll them in to delectable balls or have simple chewy granola bars. This was my first recipe using my food processor and I had a blast experimenting with random things that I had on hand. Here’s what you will need, but feel free to use whatever you have, it may seem like a lot in print, but it’s very simple:

Tools: Food Processor, Spatula, Measuring  cups

Ingredients:

1 Cup Walnuts

1 Cup Pecans

1 1/2 Cups (roughly) Dates, pitted

2 Tbsp. Coconut ‘Meat’ 

1 1/2 Tbsp. Sunflower Seeds

1 1/2 Tbsp. Quinoa

1 Tbsp. Pumpkin Seeds

1 Tbsp Chia Seeds

1 Tbsp. Flax Seeds

1 Tbsp Oats (optional)

1 Tbsp. Coconut Oil

1 Tbsp. Cacao Powder

1 Tbsp Coconut Nectar (optional)

1 Tsp. Cinnamon

1/2 – 1 Tsp Vanilla

Pinch of Cardamom

Pinch of Nutmeg

Pinch of allspice

I say the Coconut Nectar is optional because it was a natural alternative to Honey and Agave, although I believe with just the dates that it would have been sweet enough so it’s up to your discretion. 

Step 1: Add your pecans and walnuts to the food processor first and pulse until finely chopped, almost powdered.   RAW Coconut & Spice Granola - Chewy, yummy and guiltless. These raw goodies will dance across your taste buds like no other ordinary granola bar.

Step 2 Add your dates and pulse until processed well, try to keep an eye on it balling up, you don’t want that otherwise it will make it a little more difficult to mix the ingredients properly RAW Coconut & Spice Granola - Chewy, yummy and guiltless. Step 3 Add everything else all at once or gradually and pulse until mixed thoroughly RAW Coconut & Spice Granola - Chewy, yummy and guiltless. These raw goodies will dance across your taste buds like no other ordinary granola bar.

Step 4: Carefully remove blade and get creative!!!

I took half of the batch and made cute little coconut balls with the extra coconut shreds I had on hand.  RAW Coconut & Spice Granola - Chewy, yummy and guiltless. These raw goodies will dance across your taste buds like no other ordinary granola bar.

I would recommend refrigerating them before serving for a firmer pie base, ball or granola bar. They are wonderfully chewy and the flavors will dance across your tongue. It starts off  nutty and sweet with a gentle hint of the cardamom, allspice and cinnamon blend and finishes strong with a cocoa aftertaste.
